3lb ground beef (94%) 2lb italian ground pork 12-14oz celery, sliced 3 whole onions or 20oz frozen chopped onion 2-3 medium bell peppers, chopped 3 heaping tbsp chopped garlic (less if fresh) 32oz sliced mushrooms 1x 28oz tomato sauce 2x 28oz crushed tomatoes 2x 28oz petite diced tomatoes 1/2 cup italian seasoning 1-2 tbsp oregano 2 tsp black pepper Requires at least an 8-quart pot. Mix meat, onion, and garlic in pot, cook until meat starts getting solid, then drain water and fat. Return to heat and cook until meat no longer pink, then add celery and bell pepper. Continue cooking until meat is done. Stir frequently so meat doesn't burn to bottom of pan. Add all tomatoes, mushrooms, and seasoning. Bring to light boil and turn heat down to low. Taste for seasoning, then cover and simmer for at least an hour, stirring occasionally. Serve over noodles with grated parmesan cheese and garlic bread. Makes just under 8 quarts or sauce.
